Recipe: Cheesy Bacon & Sea Asparagus Pesto Crostini

This savory appetizer recipe is sure to be a holiday party crowd pleaser. Cheese, bacon, and a secret special ingredient...Sea Asparagus! They are a flavor bomb in every bite. Only 7 ingredients and ready to eat in 20 minutes or less. This recipe is sure to be your new holiday entertaining staple.

INGREDIENTS

  • 1, 10-ounce loaf French baguette

  • 1 ½ cups Jarlsberg cheese, shredded (or any high-quality Swiss type cheese)

  • ½-pound raw bacon strips, chopped

  • ¾ cup onion, chopped

  • ¼ cup flat leaf parsley, chopped (plus more for garnish)

  • 2 tablespoons mayonnaise

  • 1, 4-ounce jar Foraged & Found Sea Asparagus Pesto


INSTRUCTIONS

Preheat the broiler in your oven to high and place the top rack 5-6” from the broiler coils.  Cover a rimmed baking sheet with foil.  Slice the baguette into ½-¾” thick slices and lay them on the baking sheet in a single layer.

Combine all of the remaining ingredients in a small bowl and mix well to thoroughly combine (I find it easiest to do this with my hand, but a rubber spatula will work too!).  Spread a heaping tablespoon of this mixture over the top of each bread slice to completely cover and place them back on the sheet pan.

Place the pan under the preheated broiler and bake for 3-5 minutes until bubbly and browned.  Watch them closely so they do not burn.  Cook time will vary depending on the heat of your broiler.  Garnish with more chopped parsley and serve hot.
