Pickle De Gallo: A Tangy Twist on Classic Salsa

Ingredients:
- 1 cup red onion (½ medium red onion)
- 1 cup cucumber (2 persian cucumbers)
- 1 cup red bell pepper (1 medium bell pepper)
- ¾ cup tomatoes (2 roma tomatoes, or cherry/grape tomatoes work here too!)
- 1 jalapeno (feel free to add more if you like it spicier)
- ¾ cup Foraged & Found Dill & Garlic Bullwhip Kelp Pickles (about half a jar)
- ¼ cup Foraged & Found Dill & Garlic Pickle Brine
- 1 tbsp + 1 tsp fresh dill
- 1 tsp garlic powder
- 1 tsp olive oil
- Salt + pepper to taste
Directions:
- Dice the onion, cucumber, bell pepper, tomatoes, jalapeno and pickles. Add diced vegetables to a large mixing bowl and toss to combine.
- Add 1 tbsp dill, ¼ cup of pickle brine, 1 tsp garlic powder, 1 tsp olive oil and salt and pepper to the vegetable mixture. Mix to combine.
- Taste and add more salt, pepper and/or garlic powder as needed.
- Sprinkle with the remaining tsp of dill and serve!
