Pickle De Gallo: A Tangy Twist on Classic Salsa

Ingredients:

  • 1 cup red onion (½ medium red onion)
  • 1 cup cucumber (2 persian cucumbers)
  • 1 cup red bell pepper (1 medium bell pepper)
  • ¾ cup tomatoes (2 roma tomatoes, or cherry/grape tomatoes work here too!)
  • 1 jalapeno (feel free to add more if you like it spicier)
  • ¾ cup Foraged & Found Dill & Garlic Bullwhip Kelp Pickles (about half a jar)
  • ¼ cup Foraged & Found Dill & Garlic Pickle Brine
  • 1 tbsp + 1 tsp fresh dill
  • 1 tsp garlic powder
  • 1 tsp olive oil
  • Salt + pepper to taste

Directions:

  1. Dice the onion, cucumber, bell pepper, tomatoes, jalapeno and pickles. Add diced vegetables to a large mixing bowl and toss to combine.
  2. Add 1 tbsp dill, ¼ cup of pickle brine, 1 tsp garlic powder, 1 tsp olive oil and salt and pepper to the vegetable mixture. Mix to combine.
  3. Taste and add more salt, pepper and/or garlic powder as needed.
  4. Sprinkle with the remaining tsp of dill and serve!
