Recipe: Grilled Superfood Pesto-Stuffed Portobellos

4 portobello mushroom caps, stems removed
1 c. ricotta cheese
2 cloves of garlic, minced
1 c. shredded mozzarella cheese, divided in half
Mix together the ricotta, pesto, garlic, and half of the shredded mozzarella until well combined. Spoon the mixture into the portobello mushroom cups and top with the remaining mozzarella. Grill on high (about 400 degrees Fahrenheit) for 10-12 minutes, or until the mushrooms are cooked through. Watch out for cheese drips! Enjoy!
