Recipe: Slow Cooker Pork Verde

Ingredients

Makes 4 servings


2 lbs. Pork Tenderloin or Shoulder

1 Jar Foraged & Found Smoky Salsa Verde

1 c. beef, chicken, or veggie stock 

½ onion, chopped

4 - 6 garlic cloves, diced

Salt & Pepper


Method

Season the pork generously with salt & pepper. 

Place pork, Foraged & Found Smoky Salsa Verde, stock (sub water if you don’t have stock), garlic and onions in a slow cooker and heat on low for 6 - 8 hours. Shred the pork and cook on low for 1 - 2 hours more. 

Optional: to make carnitas-style pork verde, place the shredded meat on a sheet pan and place under the broiler for 3 - 5 minutes or until edges are crispy. 

Serve with tortillas, sour cream, cilantro, your favorite cheese, and a healthy dollop of Foraged & Found Smoky Salsa Verde. 

Like it spicy? Use 1 ½ jars of salsa and omit the stock, or add in diced fresh jalapenos, a drained can of green chilies, or a whole habanero pepper into the slow cooker at the beginning of prep. Remove the habanero (if used) before serving.
