Recipe: Vegan Bean & Corn Dip

1 ½ c. corn
1 - 14 oz. can black beans, rinsed and drained
1 - 14 oz. can chickpeas, rinsed, drained and with skins removed
¼ c. cilantro, finely chopped
½ c. green onions minced, both white and green parts
1 Poblano or pasilla pepper, seeded and minced
1 tsp. Kosher salt
Mix all ingredients together, cover, and chill for at least 1 hour. Enjoy!
