Recipe: Vegan Fried Kelp Pickle Bites

You will be the star of the potluck when you roll up with these adorable and delicious little superfood bites! Any flavor of Foraged & Found kelp pickle can be used in this recipe, but we used our Spicy Pickles here to give the dish an extra kick; dill would bring a tangier crunch and our Bread & Butter Pickle Slices would balance out the heat of this vegan dipping sauce nicely. The whimsical and fun look of these morsels will have everyone asking you, “What are these?” Enjoy!

Ingredients

1 jar of Foraged & Found pickle slices (any flavor)


For the Batter:

Oil for frying (vegetable or peanut)

1 c. all-purpose flour

2 Tbsp. Cajun seasoning

1 ½ tsp. garlic powder

1 tsp. salt

1 tsp. black pepper

1 Tbsp. baking powder

1 Tbsp. Tapatio or Frank’s Hot Sauce

½-1 c. water


For the Vegan Dipping Sauce:

½ c. vegan mayonnaise

1 Tbsp. pickle brine

1 Tbsp. Frank’s Hot Sauce or Tapatio (or to taste)

Method

Drain the jar of pickles (save the brine!) and place pickle rounds on paper towels to dry. 


Mix the ingredients for the dipping sauce together until well combined and set aside.


Whisk together the dry batter ingredients until well combined. Add water until the batter is a little thinner than pancake batter, then mix in the hot sauce. 


Heat oil until a drop of batter sizzles and pops to the surface immediately. Dip the dried pickles into the batter and lift out with a fork or slotted spoon, allowing excess to drip into the bowl. Drop pickles a few at a time into the oil, being careful not to overcrowd (the pickles may stick together and the oil temperature could decrease too much). Fry for 2 - 5 minutes, or until the outer batter is browned. Remove from oil with a separate slotted spoon and place onto a paper towel-lined plate to drain. 


Serve with dipping sauce and enjoy your adorable creation!
