Recipe: Superfood Pesto Salmon Sliders or Burgers
Love a good burger, but trying to stay healthy? Look no further than a delicious salmon burger! Packed full of wild-caught Alaskan salmon and wild-harvested sea asparagus, you’ll get a double-dose of Alaskan superfood goodness in one meal! Foraged & Found’s Sea Asparagus Pesto helps make any delicious Alaskan fish sing.
Makes 12 Sliders or 4 Burger Patties
2 cans wild-caught Alaskan salmon
1 c. panko breadcrumbs
1 large egg
Zest of 1 lemon
2 - 4 Tbsp butter or olive oil
Combine all ingredients in a bowl. Form into 4 equal-sized patties or scoop a loose ¼ cup of meat mixture and form into a slider. Place on a parchment-lined baking sheet and refrigerate for 15 minutes to 1 hour.
When ready to cook, heat butter or oil in a large skillet over medium heat (we think butter enhances the flavor of this dish and browns the patties a little better, but you can use olive oil or another preferred cooking oil like avocado oil).
Cook the patties on each side until browned and cooked through. You may need to add more butter or oil to the pan, as the patties can absorb it.
Serve on hamburger or slider buns spread with homemade tartar sauce made with Foraged & Found Pickles or Pesto Aioli made with your extra Foraged & Found Pesto Sauce.
